Not every offer should be compared to Hetzner in terms of price, there are some
advantages to OVH especially in US/APAC regions.

But, why? I understand a low-end provider doing that, but why would a major provider like OVH do it?
Older generation dedicated servers (to name them: Kimsufi (KS) and Soyoustart (SYS) get a /128 IPv6 block but all other dedicated servers at OVHcloud are delivered with a /64 IPv6 block.

That's the what, but not the why.
A /64 per interface is not required, but it is the standard (and recommended) approach. So it's hard to understand why a provider with the ability to request IPv6 allocations freely would assign /128 instead of a /64 to a physical interface. Feels like a company trapped in an IPv4 mindset.
