The best you can afford basically. Your starting point seems reasonable for a VPS host.
There's no single, "correct" answer to your query regarding spec, except if you're a service vps host looking at scalability then you need EPYC not Ryzen.

unless you were planning for multi EPYC nodes from the get-go.
Ryzen is better, Ryzen is less oversold due to smallest DRAM.

I think it is not a good idea run business by home product. Epyc and Xeon.
It depends if you're targeting consumer or business. And even then, most businesses that don't deal directly with SaaS probably don't even know the difference between Intel and AMD, they just pay one guy to do stuff for them.
It depends what kind of market you're going for - if you're trying to sell gameservers for example you'll want to be selling and marketing i9s and Ryzen 9s due to the high clock speeds and brand recognition.
You are right, But I think Xeon / EPYC also has High Frequency option. If DC product can meet you require , Choose DC series first(I suggest)
So here is the thing, Do you think something like
Dual EPYC 75F3
1024GB RAM
8 x 7.4TB NVMe
2 x 40Gbps for shared storage
2 x 25Gbps for Public Net
Would it work?
Or going for something smaller?
