SAN is typically block storage over fiber and can be exported using iSCSI or something else, ultra fast and resilient depending on how you set it up. NAS is more of a 'home' solution over 1Gbps ethernet that isn't exported as block storage to client machines. Generally NFS is used with NAS.
SAN setups are more expensive as you want to run everything over fiber or copper DACs and you need switches capable of supporting those. It doesn't necessarily need to be made up of SAS drives though.
So SANs can appear as virtual hard disks you can format on your VM or your dedicated hardware, while NAS appears as networked volumes, like Samba etc?
Precisely. NAS is file-level storage and SAN is block storage. So SAN storage is exported as a block device, making it look like a regular drive. Provides a lot more flexibility.
