What kind of modification are you looking for?
Most cases are just a simple few edits to the tpl file.

I have used {$service_assigned_ips} on email templates before by just editing the .tpl files.
There's a file called viewinvoice.tpl in your template folder, try modifying that and adding the above.

Give me a screenshot of an invoice where you want the assigned ip to appear and I’ll have a look in my staging whmcs.

You need a hook and a manual change in the template.
I could probably do that for you if you are willing to pay for it?
Note that the dedicated and assigned IP will be empty on the first invoice as these fields are populated when the service has been provisioned.

That I wouldn't recommend as that product could be hidden/changed/deleted and it could differ between invoices.
Just for information, this variable is not available in viewinvoice.tpl including any other service related one.
