Better start reading those TOS, and you'll soon find out that unlimited is actually quite limited.

They can however gradually add storage as required to not limit their users in disk space if they wish to do so (ofc they would also add a nodicks rule but still they can very well not limit users disk space except in case of abuse)

There is no such thing as unlimited hosting and many of the providers that offer so called "unlimited" hosting have a fair use policy in their terms of service that basically says they can suspend you for any reason (including using too much storage, traffic).
I would suggest looking into a host that offer fixed limits and then stay within said limits.

"Unlimited" word is marketing gimmick. All unlimited hosting is limited by RAM and CPU. Try to find hosting with good uptime, good speed, not overloaded server.
It's definitely possible to find somewhat good shared hosting that is not unlimited.
The best hosting comes from companies that don't have secret limits (i.e. "unlimited") but tell you in advance what they will actually provide to you for the price you are paying.
Unlimited is not truly unlimited. Recommended is to read fine print to understand what unlimited truly means. Many hosts will say if you use x percent (i.e. 1-10%) more than your peers, you are subject to violation of terms and ban.. so not truly unlimited.
