Yes, should work fine. I run something like that, even encrypted, on an old AMD E-350 (2 core only, no HT, and a lot weaker than N 3050) and have no problems at all.
Umm I ran rsnapshot on a VM capped at 100Mhz. That's more than enough CPU.
I'm using a atom N2800 for hourly backup with rsync, no problems @all
If you don't need to compress your data, N3050 should be more than enough.
The N3050 should have plenty enough of processing power to be a backup server or a light media server if you want it to be one.
