Traffic volume? Site content?
Few photography sites, Woocommerce shops nothing heavy traffic wise and a few Opencart sites and other php scripts.
I'd personally aim for approx 512MB per site, but someone more knowledgable than myself may have better metrics :-)
1GB for cPanel, 256MB per photography sites (assumed that they have full caching), Woocommerce/Opencart 512-768MB each and other php scripts I assume 256-512MB each.
Memcached/Redis is recommended, will require 1-2GB for 40-60 sites.
