I use all mine for streaming video/streaming media.
VPN, ownCloud, private wiki, Usenet indexer, backups of my music and comic collections, remote desktop access, and monitoring of all of the above.
Squid proxy, web server, mumble server, uptime monitoring, email server.
The most important for me is squid proxy which I've set foxyproxy to automatically use for youtube.com, my local ISP have had problems with YouTube for I think over a year now. Can't even watch 480p sometimes without buffering. Redirect YT to squid -> 720p works without any delay. Damn TeliaSonera.

Not the most important use of a VPS for me, but indeed, YouTube loads much faster (even in 1080p) via proxy on a VPS, than directly.

Cuz your own ISP may have a screwed up Google Cache setup, or you could get directed to a wrong cache instance (e.g. to which the peering connections are overloaded). If at the same time you have no issues with download speeds from your VPS, you can benefit from a fast and robust Google Cache instance running in a proper DC with multi-100Gbit peerings somewhere in Europe (as in my case), instead of some small one operated as a side job by local village ISP near you.
