Who still runs their own Exhange server is more the question...most people have moved to Office 365.
If you insist on hosting your own Exchange in 2016...yep, it's expensive.

Veeam allows you to recover an individual mailbox, which is pretty handy ;-)!
I backup the entire VM, it also archive every email to mailarchiva. I couldn't find an open source system to do it, so full VM backup is the best I can do.
That's what we use as well. We also backup the VM s well.
The builtin backup utility in windows will commit the logs.
