Selling Dedicated servers as a provider
So if I were to sell dedicated servers, what do you guys recommend :
1- Sell server directly, full root access, and client can do anything, that including sending spam and getting your IPs blacklisted. This is what I consider the (bare-metal option)
2- Virtualize the bare-metal server, and assign all the resources to that one VM on it, allowing you to have some control over the machine in case of issue.
Any other options ? Or tips and tricks.

if you want to sell dedicated then you should opt for the 1st option.
The 2nd one would be "VPS Hosting as a provider".
Tipically we give our clients full root access and freedom to use the server as they please. What you can do is state in your terms of service that you have zero spam tolerance and that if it happens the server can be suspended or terminated.
what kind of a control are you talking about? you can have the same amount of control at the network level (gateway) with a bare-metal dedicated server option if spam is your main concern.

2 is a VPS with dedicated resources
So, 1:-)
Managed physical server where you manage, install and secure what the customer wants will be safest for you as a provider, unless you get stupid spammers that want "managed spam".
The only real use for a massive VM using the whole of a dedicated server is lowering cPanel license costs, otherwise it's just something else to go wrong and configure.
