Just a guess, but did you try:
example.com { proxy / backend }
?

Is DNS configured properly to have
example.com
point to the server in question?That's a lets encrypt related error when trying to get a cert, but without the config posted it will be hard for us to see what's causing it.
even if you change the domains/email's .etc to fake ones posting the config will help.

Also have you tried 0.81 which supposedly stops trying to use SSL on port 80
