I've heard that transferring domains from them is quite the task, but here's what I found at namecheap for instructions on transferring from 1&1.
How to obtain EPP code from 1&1:
Login to your 1&1 account
Choose the necessary package and go to its Administration page
Select Domains in the Basic Settings section
Select the domain name you would like to get EPP code for
Click Info
Basic settings > Domain name > Info from memory
Can't remember if there's some lag between setting the domain public and 1&1 actually making it public though.
