Hi,
i am looking for a dedicated server with a config similar to below:
CPU: E5 or higher
Ram: 64 / 128 GB
HDD: 1 TB
Data Transfer: Anything over 100 GB is more than enough
Location : No Preference
am getting a similar machine from Hetzner in 79 Eur (via bidding).
was wondering if someone else could a similar one at a cheaper / similar price
I need thing to analyze data for a hobby project and dont want to spend to much.

Like @Andreix, I'd suggest you stick with Hetzner.
On their server auctions, I already see another server here (similar to your specs) going for 57.14 euro.

Hetzner probably the cheapest for what you need.

I am quite certain that a hobby project would not even figure on a skiddie's radar. If DDoS is a threat, the cheapest solution would be to use a DDoS protected VPS as a reverse proxy to serve web traffic.
I do not think, that you will find something cheaper. It is damn dirty cheap and you still looking cheaper...
are you sure for the amount of RAM needed?
I suggest also taking a look into hetzners regular EX41S offer: https://www.hetzner.de/ot/hosting/produkte_rootserver/ex41s which comes with 64GB at low monthly cost of 39,- € (without VAT) but with setup! - just do some math on the estimated time you need this service ;-)
