Installing minimal CentOS on VPS

Hihi,
Im kinda a newbie but I just wanna learn a little for fun.. been googling but can't solve it .
Here's what I want to know how to do :
1) Install a minimal CentOs 6/7 - my provider has solusVM but there is no option to install a in minimal OS , only full
2) Maybe its easier to just install centos 6/7 and uninstall :MySql , Apache - 2.4.3 , PHP ,
Bind, phpMyAdmin -RoundCube Dovecot Postfix proFTPd ?

Just ask your provider, that's what I did, and they added it to the list.
Option 2 seems pretty viable.
Or maybe using yum grouplist then yum groupremove
Your provider should do it, ask them. Most of the VPS have many images to choose from

I have to have a minimal install...if I end up having to remove stuff like apache and ftp then I freak out thinking there's little traces of it hidden somewhere in my system...damn ocd
