You really need a dedicated server for data mining project.

Get a dedicated server and create 2 or 3 VPS and use them as you wish.

Mounting storage server onto KVM server will overcome the storage is smol issue, but give you the storage is slow issue.

It depends, for back-ups, a slow storage is not the end of the world in most situations, but for live storage, it usually is.
