I don't mean the name of the VPS but how do you refer to it when writing and speaking. Do you call it a VM for example?

VPS/VDS/Dedi depending on type of server, which implies they're with a provider. (VDS = dedicated threads/cores).
I only use "VM" for when I refer to a local VM, e.g. a development/testing VM I have on my main desktop computer.
I just call mine VMs, and any dedis I call metal.

For me the perception of a "VPS" has been tainted by all of the bad hosts out there, so I affectionately refer to them as VMs or just servers.
