PHP 5.6 was EOL'd in 2018 so I wouldn't trust the security of any host that uses it as default.
PHP 7.4 is in "security fixes only" mode now, with EOL coming in November this year.
Only reason for me to use PHP7.4 is because of IonCube loaders. Everything else is latest PHP8.
PHP 6 is the bestest.
5.6 is the best for me, no bullsh*t added

8.0 on new vps and 7.4 on old vps.
moved my php and WP site to 8.0
nothing breaked. Most of the themes and plugins have been updated to support PHP 8
5.6 with patch security because we lazy to move
8.1 because I like to live dangerous life.
We default to PHP 8.0 currently, soon bumping to 8.1.
Mostly 8.1 will soon be fully 8.1
I run both 7.4 and 8.1. I run a XenForo board that I haven't updated yet and is not compatible with 8.x.

although 7.4 is my default PHP version, but why is there no 7.2 in the options? there should be many guys using PHP 7.2.

PHP 7.2 has been EOL since the end of 2020, so it should be long gone by now. EOL dates are known in advance so all users have more than enough time to verify that their code still works with newer versions.
Anything really. C# (which is what I use), Python, Ruby on Rails, NodeJS, whatever. Even Java - Play Framework is actually quite good.
Yes, there are possibilities. But none of them is IMHO equipped with such a combination of execution speed - low memory consumption - code writing speed.
