I do this, it's fine as long as the NVMe's can sustain high speeds. A lot of NVMe's go down in performance after its cache is exhausted, which can sometimes result in terrible speeds. RAID10 would be a lot better, but RAID5 should be fine as long as your NVMe's are decent.
