I'd say: imapsync all the way.
Can be easily dockerized, used directly on your computer or you decide to support (and trust :P ) the developer and use the service (https://imapsync.lamiral.info/X/). Even free for smaller mailboxes.

Not sure if in free version Vault is available.
You can use imapsync, but if you don’t trust them, you can try to use Google Takeout.
just download imapsync and run it locally, nothing untrustworthy about that...
