After moving out from Hetzner, I'm once again looking for a strong VPS for my Minecraft server.
CPU?
- High single thread rating!
(Minecraft servers mainly use only one thread)
Other specs:

Was just searching this for a client that's been having a hard time... You pretty much looking for 3900x package or better with dedi vcores, nvme, and 1gbps with layer 4 ddos protection. Iv found some good possibilities with server hunter. Otherwise @Connor here could be more informative.
Buyvm @Francisco got 3900x dedicated cores (4gb Ram and up) in Vegas and New York with CloudFlare magic transit

You have to check a lot on the cores and network speed. Minecraft servers eat through CPU rather than RAM. But you will need to check fair use policies and so on. As CPU usage will likely stay high all the time.

I only see "2 CPU Cores @4GHz Turbo" but which CPU is it?

But it seems they're out of stock right now. You could still try the "cloud" version. I tried them some time ago and the performance was quite good. I had some throughput issues (could not get rates > 500mbit from my home) which was a no-no for me. For a minecraft server this should be acceptable though.

It has many cores, but a Xeon X5670 is just not strong for a minecraft server which needs a lot of power.
Minecraft's main processing is heavily single - threaded.
Thread solved, bought a server with deinserverhost. Their support is very helpful and they even gave me a special promo code for KVM GAME 8.
Many providers can offer it but you would need KVM with high I/O, should be on SSD+ for minecraft servers.
