so why windows are offering 180 day trial ?

So you can test it on your own gear, not to run prod.
Provider can also offer you a trial - but then the entire service, including server must be free.

Add windows license to your budget and the job will become so much easier; the other thing is the quantity of cores and memory - you need quite specific EOL gear to fit in the budget, you may wish to adjust that too to have more choice.
