Maybe you have it installed wrong. For me, everything works fine on over 200 computers (RDP, physical devices). It is known that it will be hard to play game on it, but it is not such a terrible delay, it can be compared to the quality of VNC, so I would say that even this delay is not there.
I have a few questions:
How did you get it installed?
What host is it on?
Virtual machines (what virtualization) or physical computers (are you sure they are connected to the network by cable?)?
What operating system?
Guacamole has a variety of hardware firewall solutions (e.g. FortiGate) and there is no real alternative. Yes, I know it's java but you have to get over it.
It's good, but i use linux.
Slow when first open and after connect still laggy.
I installed from guacamole docker.
I use VPS for host and want to connect rdp linux vps too.
Host using Debian and want connect rdp Centos.
Are these virtual machines on the same network? Maybe they have poor connectivity or are complete elsewhere. I have tested Guacamole only on devices in the same network and I have guacamole installed without a docker.

That's why you have it so slow because remember that this is a web VNC client, i.e. guacamole connects to your server on another network and you connect to guacamole. The delay here is perfectly normal.
Yes, guacamole can connect to physical devices, e.g. via RDP. In one of the companies I have a pool of computers and if an employee connects, they get the first free computer.
