Dedi/VPS for 300 users(90% will be Nz based) Nextcloud, Jitsi, riot(matrix) ~2tb+ storrage
I need to host a corona colab cloud for 300 mainly New zealand based people.
The server will be operated by https://www.xchc.co.nz/ a nonprofit art warehouse, providing Studios and workshop spaces to creatives and the wider community.
We hosted 1500 events in the last 5 years.
In the future it will also be a home for the local Communiversity.
I have a hard time guessing the needed ram and CPU (never had so many users), what would you choose?
Any provider recommendations?
Somebody out there supporting nonprofits?
Thankfully would include them in our proudly supported by [...]
(I'm normally Europe based and don't know the pacific hosting world)

Your best bet price/quality wise would be OVH Sydney server - https://www.ovh.com/world/dedicated-servers/enterprise/1806do01.xml
The latency from Christchurch is around 40ms and it is 20ms to most DCs in Auckland so there won't be much of a difference if your visitors are from ChCh.
