As a consumer always KVM. OpenVZ isn't secure. With that said if you're starting out and need a cheap setup to learn on and set things up then it's a good budget solution.
For the long term, KVM.
KVM all the way. Xen is nice too and pretty comparable but I prefer KVM.

It depends on my needs. OpenVZ is great for most things but not all. KVM is nice but also has its cons.
Same could be said about wife and mistress. Both have pros and cons.

Your wife won't permit remote mounting.
