    From what I can tell, it's possible to overcommit memory and CPU on KVM. Disk space is another story though.

    It's possible but the degrading effects are observable, similar to Xen ballooning, because they are hypervisors, and most providers using them aren't in the interest of overselling anyway. On container systems like OpenVZ, overselling has negligible effect unless contention gets high enough, but even below that you are still not getting your money's worth.
