What do you mean? You just need to change a port
There would not be anything different in configuring ownCloud on a NAT VPS except for the Apache listening port.
Assuming you are using Ubuntu 16.04:

If you are using IPv6, you can listen on port 80 and setup Cloudflare for your domain DNS. If you are stuck anywhere let us know.

Make sure you use the encrypt option if you plan to add personal files to your owncloud due you don't know who has access to the disk image of your vps.
