Create a degraded array, copy across system and install bootloader then rebuild the array.
As said above, create the array first with 1 disk instead of 2, copy add data of disk 1 to diskt 2 (the array), then make sure you also have your grub setup, reboot from the "new" disk, format the first disk and add it to the array, rebuild and done. This is also how you setup software raid on Proxmox VE.
