You have, there is no way for a merchant to unilaterally create a subscription or otherwise debit your account.

I agree. However I think it should be possible for the merchant to stop billing the client, even if the PayPal subscription is kept active?

Both the merchant and customer have the ability to cancel the sub, but ideally the customer agreed to it and therefore is the one responsible for it.

For cards issued in USA, Canada, and the UK there is something called AVS whereby the merchant can verify certain (it varies) address details with the issuing bank or credit card company.

It would be good to be able to choose what details are disclosed to the merchant but I guess that's that.

Companies can cancel Paypal subscriptions on their end.
