Are you guys talking about Route53 being an automated slave DNS server or just entering records at both?

DNS is the same yes, but with Cloudflare Pro you get more options for websites, ex, WAF, etc.

I'm using dnsmadeeasy.com for many years now and I just remember 1 downtime a few years ago caused by a large DDoS attack. Since then the uptime as always been 100%...

I use Dehydrated using dns-01 challenge using a hook script to add the record via cloudflare api, like @rm_ i use a wrapper script too running as root to be able to reload Dovecot/Nginx/Postfix etc.

Anyway, you can use the DNS challenge which doesn't require opening a listener.
