I'm currently using Vibegames/Ovh/Advinserver. Each of these three has its own advantages and disadvantages, so I'm looking for alternatives.

OVH have for years said that they do custom racks and form factors. The fact it's an mATX board is likely because that was cheapest.

LE-B says it's S1200SPL which is mini-atx. I doubt they did their customization magic for this boards and intel says that standard chassis are 1U.
