because DDR5 RAM is fast and most LE hosts offer them. Why go for a slower one? same with SSD vs NVMe and a higher clock speed CPU of 5.0GHz vs lower. It doesnt matter its shared or vps or dedi.

The (IMO) most important point though isn't speed but rather, as I already hinted in another thread, reliability. The fastest NVMe is but a worthless pile of crap if it dies and takes one's data down
