I mean outside price and physical vs shared virtual server, does a dedicated server requires more maintenance than a vps or is it the same?

From the client's perspective, it doesn't matter. The same work is required by system administrators: first, setting up the environment, web service, database, email service (if necessary), and so on. Then, maintenance: updating the software, configuring settings for maximum performance, and so on. Working with unmanaged virtual servers or servers without an operating system requires at least basic knowledge of system administration. However, you can hire a third-party system administration company for basic setup and subsequent maintenance.
The maintenance doesn't really change, (although virtualization definitely has its advantages), but with a dedicated server you get to use ALL of the resources ALL of the time, whereas with a VPS you're sharing the resources and you'll often have constraints like only being allowed to use ~25% of the CPU for long periods etc.
