Which open-source panel that does exactly what I want?
I'm currently using FastPanel, but I would like to try an open-source, free, reliable, lightweight, and low-resource consuming (CPU, RAM, disk) VPS/VDS control panel. So far, I'm considering HestiaCP (I used VestaCP a few years ago). Please, recommend a panel. My main needs are adding and configuring websites and email.

I would try keyhelp or webmin.
Keyhelp is probably easier to use and configure for websites and email.
Webmin is a very mature project with a somewhat clunky interface but it's very lightweight and ideal for small servers.
Keyhelp is not an open-source project
So, I did some research on the forum about control panels and found that HestiaCP is a really good panel.

Low-resource panel... Try CentMinMod.
On the aaPanel forum, there are few topics and comments (https://www.aapanel.com/forum), while on the HestiaCP forum, there are many topics, comments, and very active discussions (https://forum.hestiacp.com/). That's why I trust HestiaCP more.
Panels do come with a cost though. Sometimes it is difficult to debug along with slowed performance than vanila in the same machine.
As I understand it, CentMinMod doesn't have a web interface โ I don't want to deal with the command line interface.

hestiacp is not truly one click so its good if you are willing to manually configure through SSH.
development wise aapanel is very active and up to date. not everyone can accept its Chinese roots though. if its for commercial purpose then go with paid products.
I have been using aapanel for last 3 years and none of the alternate come close to this. Now iam testing with webmin-virtualmin as some of our clients doesn't want to deal with chinese platform.
yup and their one-click migration works flawlessly.
go and get an mxroute account, then you'll get mail service ready and running smoothly.
the rest part, the website, can be done via any panels.

Virtualmin user for 15 years or so, very pleased with it.
Virtualmin consumes too many server resources.

What about direct admin on buyvm or plesk web host edition on Ionos?
I have been using buyvm for several years, and they are great.

This come with reseller module right, etc. For personal hosting why does one use direct admin? (My Personal Use case question)

HestiaCP is not the right choice for you. It's not a beginners panel but aims to be a daily tool for experienced linux admins. Unless you feel confident to configure apache, nginx and mysql to your needs via CLI by yourself and actually understand how that panel works so you can tailor it to your needs - it's the wrong one.
If you come over to our forums and start crying about it, I will tell you exactly that.
I understand that this isn't the comment on your topic you wanted to get, because you are not looking for advice but rather just agreement for a prebuild opinion.
You should give keyhelp a chance as other suggested. While it is not opensource it definitely ticks much more checkboxes for your needs based on your history with webhosting.
