Offshore means that it's either hosted with Leaseweb, Hetzner, or OVH, therefore it's superoffshore/bulletproof and you can use it to host anything but child porn and get lifetime alpha reseller for 0,99$.
I'm not sure I understand why they market Isle of Man as offshore but not any of their other locations, several of which qualify as offshore.
That said, I have a VPS with Edis in Isle of Man and I'm happy with it.
Interesting, I just did a 4 hour (collected the data in four hours, review took much longer for me to write) review on Linode (http://www.96mb.com/96mb-extreme-4-hours-vps-reviewlinode/) using their trial VPS, now that EDIS offers a 4 hour trial VPS too, I might give it a shot when I have time and do another extreme review on this location. Don't count on me because I am already pretty slow in getting through all the review requests.
How 'offshore' is the Isle of Man really? AFAIK it has signed the Berne convention etc..
It depends on how you quantify offshore.
Isle of Man is commonly used for tax avoidance (legal tax minimization/reduction) and licensed gambling.
It's not exactly suitable for copyright violation, though enforcement is - as far as I know - untested thus far.
Edis is the first webhost in Isle of Man to target the low-end VPS market. Other hosts on the island have so far only catered to large enterprises.

Any porn site, as long as it's not pedo- or zoophilia is safe in most US locations too. The Isle of Man, as already mentioned, is great for gambling and tax-avoiding stuff.
